Mexican Noodles with beans
My latest invention.
Preparation time: ~10 mins
Rating 9.5/10
What you need:
*1 Pack Mild Mexican Chilli flavour supernoodles
*Some beans (I used soya beans from freezer)
*Peppers
*Cheese
*Cayenne pepper
*Coriander
*A tiny bit of salt/soy sauce if you don't find it salty enough
1) Boil noodles with vegetables (cut peppers first) in pan with loads of water (do NOT add sachet of flavour yet). Break the noodles up whilst boiling to speed up process.
2) Cut cheese into chunks/grate it while waiting. I prefer small cuboid chunks.
3) After about 3 mins of boiling remove some of the water. Leave some water in. About 3/4 of the way up to the noodles (in height of the saucepan).
4) Add sachet of powder, and put back on the heat. Let boil for about 1 min.
5) Remove from heat put into bowl.
6) Let cool for about 90 secs. Then add cheese chunks, cayenne pepper and coriander.
7) Stir.
8) Enjoy. If not salty enough, (I found it wasn't) add some soy sauce
The cheese chunks should melt with the heat of the noodles slightly.
Of course you can omit one or two things from the ingredients (except the noodles!) and it should still work

I know you all tried it for dinner... Let me know what you think please!
I am thinking about starting my own cookbook :)
Re: Mexican Noodles with beans
I tend to use super noodles if I'm in a hurry. I've found you can come up with a tasty dish by mixing in different ingredients such as a pepperami, piri-piri sauce, cheese, Bacos (those bacon flavoured soya chunks) and so on.
