    Buckwheat pancakes.

    Brilliant these are

    100g buckwheat flour, pinch salt, 1 egg, 300ml milk, 50g melted butter, oil.

    Mix the salt & egg into the flour, and slowly add the milk beating all the time. When you have a smooth batter, leave it for 30 mins in the fridge.

    Stir the 50g melted butter into the batter.

    Cook em in as usual a really hot pan with a little sunflower oil

    I filled mine with chopped lychees and Cote D'Or vanilla ice cream

    Also great with bacon and eggs ! Used to be a staple of the breakfast menu here.

    Actually yes, buckwheat has a peculiar aftertaste (which may be an acquired taste tbh), which kicks at the back of the throat

    Looking forward to breakfast after a nights rest for the batter.

    These buckwheat ones sound good, must try them. Slipped up yesterday never got any pancakes made just got as far as printing out a 'Indian pancake filling recipe' but never got them made yet.

    mmmm I'd bought some buckwheat flour a couple of weeks ago when I couldn't find quinoa flour - trying to make quinoa tortillas - first effort was a sticky fail.
    Tried a combi of internet recipes for bw pancakes - basically added greek yoghurt and olive oil to flour+milk.
    Made totally too fragile pancakes. Added some wholewheat flour and that just about fixed it, but had to make them thicker than I wanted.
    Yoghurt made them a little fluffier than normal - next time will not elaborate on basic recipe
