Hang on, the clause states that you assume all risks and liabilities associated with the use of third party products. All that states is that if a fault is related to or caused by a third party product, then Sony won't cover you. It doesn't void your warranty. Even if you have used it with a third party HDMI cable or whatever, it seems to me that the onus would still be on Sony to prove that this was a cause of whatever problem you were experiencing.
The associated risk of using the accessories is that Sony can tell you that seeing as official parts were not used, they cannot be responsible for the lifetime of the goods.
Same with a car, if you use non-standard parts in the car the manufacturer will not cover it under warranty, because they did not intend it to be used in such a way.
Can a HDMI cable really cock up a PS3 (or DVD player for that matter?)
