Hardly surprising the availability is low on Ultimate - the only two reasons to get it are 1) Multi language support and 2) Bitlocker. Professional has pretty much everything 98% of people would need, and practically all home users will be fine with Home Premium.
I do want the multi language support so I ordered a copy of Ultimate whilst prices were merely expensive rather than teeth pulling.
