I don't understand why companies are releasing devices without 4.0. Surely it would be better to just get it right first time than create it with one version and update soon after release.

lolz..this is LG we're talking about, they couldn't even get 2.3 right on the Optimus 2x till a couple of months ago, so I wouldn't hold out much hope of decent ICS build till some time in ...2013

Android 2.3 makes this a non-starter for me. Why buy a brand new smartphone and then wait 6-12 months (if you are lucky) to upgrade to Ice Cream Sandwich?
