I didn't realise that the official TOR bundle contained adware, toolbars or other crap?

No, but it recently came to light that a popular browser/tor bundle *did* contain various tracking stuff.

I'm not bothered about all the TPB bookmarks/connections etc, but the idea of a truly stripped down, *fast* browser is one that I like...

    +1

Although I'd be happy enough if FF didn't start eating process memory like John Prescott in a pie shop.

Yep, for mobiles. Comes with WiFi security breaking tools so you can get free WiFi everywhere.
The PirateBrowser website claims its new bundle "allows you to circumvent censorship that certain countries such as Iran, North Korea, United Kingdom...
Was that arrangement of countries deliberate?

Nope. Enabling JS was a known detail to make the web in 2013 actually work. This was explicit malware provided in the bundle.

    Any source for that?

I have found only this: http://www.engadget.com/2013/08/05/tor-browser-for-windows-exploit/ which was not "in the" bundle.

Yeah I also downloaded the TOR bundle and found JS turned on by default with no no-script addin.

As I only use TOR for getting around internet restrictions and nothing unsavoury it doesn't bother me, but for its mission statement it appears quite wrong to me!
