Boring but for me it's Facebook, Instagram, Google Fit, Google Photos, Google Drive, Onedrive, Gear360 and TouchOSC
Oh and forgot - Nationwide banking app!
I find the Met Office app and the satnav useful but, not essential. Most others I have tried are either hampered by intrusive advertising, just plain crap or, more likely both. I am soundly peed-off by the number of pre-installed apps that cannot be prevented from running in the background and cannot be uninstalled.
Too many to list but a few slightly less standard ones:
Monzo Bank
Discord
Inbox
Waze
Duolingo
KFC Colonel's Club
POF
Those last 2 aren't related ;)
Nova Launcher - gives you the same familiar interface on all of your Android devices
HD Widgets - great weather/time widgets
Automateit Pro - simple if this then do that app
ES File Explorer Pro - the free version is hot garbage, but the paid for one is awesome
Google Keep - a Gmail users dream of a note taking app
Google Maps - detailed offline map of your area
UK Bus Checker - essential if you live in a major UK city
Google Translate - don't go on holiday without it

Deutsche Zeitungen a plethora of German newspapers and magazines neatly organised in one app
BBC News
Poweramp Easy on the eyes music playback
ACR - Call recorder
Paypal
Paypal Here - for taking card payments while out and about
Fing - network discovery tool
PingMeter - 'The machine that goes ping' ;)
IP Tools - combo tool for trouble shooting network problems
PingTools - another network utility
Wifi Analyzer - another WiFi discovery tool
Pinouts Pro - essential app for anyone who ever wanted to attach a new plug to a cable
Adaway - brilliant adblocker for rooted devices
Root App deleter - remove/turn off junk apps on cheap China phones that are rooted
Teamviewer - remotely control other devices
Anydesk - another remote control app
Tinycam - watch your CCTV cameras
BT WiFi - the essential WiFi app for road warriors

Tinder. And solitaire.
Whats app, reddit poweramp and the google ones are essentials.
Whatsapp, youtube and reuters. The rest I can ditch really.
Kindle, ColourNote, Compass, WhatsApp, MX Player, Fuelio, Torque, D&D Spellbook, D20 SRD, MyFiles, Adobe Reader, ConvertPad, MyVodafone, eBay, Steam.
Plus the usual utilities that come with it. I deleted as much of the Google guff as I could get away with.
My most used apps are Tunein Radio, Android Auto & Solitaire. I use these everyday all the rest are as and when.
These days I mostly just browse the web, youtube and use my phone for my 360 camera. My essential list for 360 photos/videos is:
Ricoh Theta app
Vanish360
Ricoh Theta+
Snapseed
Retouch
Lightroom CC
Collect
Street View
Insta360 Air
Golden Hour
None... I dont use a smart phone and will never need one
Essential? None at all.
Since I don't find a smartphone essential, or even particularly desirable, but really just occasionally convenient, there certainly are no individual apps that I find essential.
Like Rubarb, don't have a smartphone, don't need one and, unless the privacy issues are resolved to MY satisfaction (not holding my breath on that), don't want one. Everything I want, aznd the utterly minimal things I really need from a mobile phone can be satisfied by an old-fashioned dumb phone, that being a dozen or so number memories and the ability to make/receive phone calls.
On iPhone the built in apps were good enough so suit my essential needs.
On Android i have had to download a "Notes" app, since the built in one didnt meet my essential needs.
Now if the question had been for nice/fun to have apps, the list would have been longer :)
MX player
Opera mini
FreeCell
DNS66 - If you really want to stop most ads
