I'd like for Nvidia to explain their logic behind giving a 3060 more vram than a 3080.

Weird card. 36% less performance, 33% more Vram and a smaller bus than the ti? and more vram than the 3080! Very strange thinking.
This just teases people what they cannot get.
Interested in this sort of question too. With a quest 2 with 3664*1920 at 90hz, does 10gb of 3080 cut it for car and flight sims? I'm sure the 3080 will still be better than 3060, but is its vram hurting it there? How about the 8gb of 3070 and 60ti?
Intel Tried doing the same thing, when AMD just inched in on them step by step.
Totally game dependent, you can drive beat saber at 90hz on a valve index with a GTX1660, Half Life Alyx too at medium settings. A 2080ti lets you do all of this at 144hz with VRAM hovering between 8gb and 10gb at 100% supersampling so I’d imagine the 3070 would be fine for car and flight sims from a VRAM perspective. I would say though check out on the nvidia forums the issues VR users have been having with 30 series cards and they’re also getting trounced by the AMD 6800xt and their sheer rasterisation power.
