Given Google are the main supplier here, they aren't doing it for the good of your health.
They're massively useful for training machine learning algos though.

When they realised they could use Captchas for this, it hit 2 massive birds with one stone.
Are they human and training driving AI, it's been years since it's been anything other than stuff you would see on a road.
Personally, I think these turing test based Captchas are great and yes they're annoying but like with any form of security, better security means less usable/take longer.
The only thing that really frustrates me is when it seems to have messed up and asks me 3-6 times to find something.

I call BS.
so you plug in a kay and you can avoid the captcha's? What's to stop a bad actor putting a security key into an automated system?? This seems to be trying to leverage secure identity management systems like yubikey in a way that could be actually damaging to the idea of secure identity system.
If you can't leave your key plugged in (which would negate it identifying you as a human surely) then you have to hunt for the key, find a free usb slot, plug it in and click a button. I think I'd rather click on the sailboats with my mouse or finger.

And using my VPN i get to try these often, some times even in feedback loop meaning no matter how many times i do the captcha they just kick out a new one, in those cases i have to change VPN server.
If google are in on this, i sure as hell do not want it.
If your IP happens to be a TOR exit node, you'll get this a lot. I use TAILS and TOR when taking down scam websites. Part of that is obviously finding the hosting company and reporting abuse, but their websites are full of these things. 6+ isn't uncommon and it's very frustrating. I could just do that part off TOR but I like to report them whilst I'm poking around the website and wasting their time with fake submissions from multiple IPs.
