Probably a health and safety thing...
...and make sure you use different chopping boards for cooked and raw meats.
Red = Raw Meats
Brown = Cooked Meat
Blue = Fish
White = Produce
Green = Salad/Veg
Did my chef training pay off then? Or have I got it wrong? (Bear in mind, I did my training about 4 years ago - and no longer work in a kitchen!)
