I've got a lurvely collection of old vintage crystal microphones and sittin here idly wondering if I could fit a 3.5mm jack plug to them and see if they worked.

Are they fitted with 1/4" jacks? You can get quarter inch to 3.5mm adaptors if so :)
Crystal microphones have quite a high impedance output though so they may not work well with anything and everything, plugging into something with a tube preamp stage would probably yield the best results.

That's a din plug. You can get din to jack adaptors. Have a look at Maplins.
It's a 3 pin, can only find 5 pin?
A three pin din plug should fit a 5 pin socket. There was a sort of wiring standard, but not strictly adhered to, the centre pin of the three is usually ground, pins one and three are signal in a balanced input, or one of this pins is also connected to ground for an unbalanced system
