    The black Soya Bean.

    Hi
    The black soya bean is in the news as an aid to slim and help prevent diabetes.
    As an overweight Diabetic I would like any Ideas on how to cook this bean.

    I'd imagine you could use it as you'd use other beans in cooking - how about as a replacement for kidney beans in a chill ? (chili is also very good for you )

    I didn't see anything relating to diabetes - but I'm sure it can't hurt too much.

    Black Soya Bean in Sweet Coconut Sauce :

    100 gms Dry Black Soya Bean
    150 mls Coconut milk
    50 gms Sugar
    1/2 Teaspoon Salt

    Preparation
    1. Soak the black soya bean in water overnight. They will swell to approximately double their size.
    2. Place them in a chinese style steamer and steam for 30 minutes.
    3. Put the sugar, coconut milk and salt, together in a pan and boil on a medium heat until the sugar dissolves.
    4. Serve the beans in a small dish covered with the warm coconut sugar mix.
    5. They can also be served cold, but warm is preferable.

    Most beans need soaking overnight, and then quite a bit of cooking, so 30min steaming doesn't seem enough.

    Anyway, I would probably get a pile of beans, soak them overnight, drain and put in a pan with lots of water and a stock cube. Boil for 10min, then reduce to a simmer. Add a diced onion and carrot, and simmer for 20min. Then add a diced smoked sausage and simmer for another 15min. Serve with crusty bread.
