    Chilli Chicken Noodle Soup.

    Just cooked up a batch of this tonight for me tea, best batch yet

    Grab some decent sized boneless chicken breasts and stick em in a dish. Make a marinade of honey, hoi-sin sauce, a little oil, light soy, black pepper. Rub this into the breasts - pricking the chicken makes it soak deeper. Leave this for a day or so.

    Stick the oven on max, about gas mk 9 (electric - look it up). Leave it to preheat for 15 mins.

    Oil a pan, and place the chicken breasts on it, wipe as much of the marinade off as you can, otherwise there will be a great blob of carbonised honey left to wash up.

    While they're cooking, add a little oil to a pan, and fry off a few chopped chillis (with seeds if you're brave, or without if you're a wimp), smashed & sliced garlic and thinly sliced ginger. Just as the garlic starts to brown, add 1 pt of chicken stock, or water and two chicken oxo cubes. Chuck in some thinly sliced onion, red peppers, mushrooms (or whatever else you like - baby corn is nice). Add a bundle of noodles into the stock and simmer until noodles are soft.

    While that's cooking, take out the chicken, and leave for a minute or two to settle. Carve into thin flat pieces.

    Finally, add some creamed coconut and lots of fresh lime juice to the stock, dish it up and lay the chicken pieces on top.

    Just whizzed the left over stock with the remains of the chicken and a tin of sweetcorn and a dash of double cream
