    Buying knives

    OK guys, so I'm getting married this summer. I'm looking at the gift list, and one of the things we really want to get is a good kitchen knife set, but I don't know very much about this.

    What should we be looking for in a knife set? What are good makes? We're really looking for something that'll be good for general use, and will stay sharp for a long time, etc.

    Any thoughts?

    Lots of thoughts. There are already a few threads on this.

    Globals the the brand at the moment. They aren't as good as some more specialist makes, but they are still good. Although you do pay more for them as they are the big brand. They also tend to be sold by more expensive stores, John Lewis for example.

    I have 4 Globals (purchased from JL with loyalty vouchers) and they are amazing. The first time i used them i was blown away. Granted my previous set were three years old and cost £8 from Ikea

    Even these stainless steel knifes loose their ultra sharp edge quite quickly, so you should get a sharpner too. I didn't fancy getting a wet stone and having to worry about angles etc, so i got a Minosharp unit that has two stone wheels, making it really easy to use.

    If you are putting together a wedding list at a department store they you will be limited to what is available. Probably Global or Sabatier.

    I find that globals are nice to use, if your not suing them for hours on end, because they can give blisters easily, but for home use they are great, look good, have nice blades that stay sharp for quite a while.

    fook knows all i know is they stay razor sharpe have a mahgony grip and are perfectly weighted..

    One of my large Globals recently snapped in half while cutting some bread! Think I would consider others from now on...Wustoffs?

    We have three Global now; 20" Cooks knife, 18" vegetable chopper and a paring knife. Very nice to use, look great on a magnetic wall rack and insanely sharp.

    They are pricey compared to other knives that are just as good really, but they are the dogs nuts and if you take care of them they should last a life time.

    We have a Minosharp too, you really need one for Globals. £15 IIRC.

    They use an extremly hard, but brittle stainless steel. Consequently they are prone to snapping, or chipping, this is covered by the guarantee, but would be a problem if you need to use it. On the plus side they retain an edge well, but take more effort to re-sharpen. If you want scary sharp blades then carbon steel is the way to go, stropped on a bit of leather you can truly shave on them.

    And dont be tempted to get globals on ebay. most are fake.

    if i remember you can tell by the indentation whether they are fake or not, as the real ones the black dots dont wear off like the fake ones..

    Read someplace that the fakes tend not to have the sand in the handles to balance them.

    I have 2 10" cooks knives.A Wusthoff and a JA Henckels.The Henckels wins hands down.

    Mine were bought in Japan. Global UK will not respond to my emails and Global in Japan says take them back to where I bought them!

    I guess the breakage apart I do like the feel of them.

    I bought a 5 piece set with block and a single 20th anniversary general purpose knife from a local fenwicks Xmas 2005, Bread Knife, 20cm Cooks knife, 15cm cooks knife, 1 small veg knifes and a fluted 'sushi' knife.

    Well I had a Wustoff and a few sabatiers before and I massivley prefer the feel and edge of the Globals, like a couple of previous posters stated you need to keep them sharpened - I also use a 2 wheel minosharpener - works well and no fear of ruining the edge (as is poss by amateur with a stone) also the stones are VERY expensive.

    1 thing is be careful when washing them as if you use a scourer, abrasive sponge they WILL mark easily.

    Going back to the original post, if these are going as a request on a wedding list, it's probably going to have to be Globals or Sabatiers

    I agree, but seeing as they are being bought for him............... Globals, Globals, Globals!

    Just make sure you put a Minosharp on the list too. A magnetic rack to if pos, if not a block.
