    Custard ?

    Anyone know how to make 'Mint' custard? It goes really well with chocolate sponge pudding , but how do you make it ?

    You could try just normal custard from powder, and then add some chopped fresh mint leaves (most supermarkets should have them, or mint grows like wildfire if you have a garden)

    3 tables spoons of birds custard powder, 1 of sugar, and a splash of milki n a bowl, stir well and work out the lumps.

    Meanwhile heat up a pint of milk to just gently simmering (don't boil it). Use a non-stick milk pan if you have one.

    Add the hot milk to the bowl custard mix, and stir, if it doesn't thicken you can put it back on the heat for a minute or two which will help.

    Add your chopped mint et voila!

    If you want real custard you'll need to look up a recipe (Nick?), but I like powdered as it reminds me of school dinners.

    PS check those quantities against the packet of custard, I've probably remembered them wrong.

    Hmm but what happens to the mint leaves after? I dont remember any green bits floating in it !! I have loads of mint growing , but somehow custard with mint leaves in it doesnt seem right ?

    Chop some mint up, chuck it in the milk and bring to the boil, BUT then strain the milk before adding the custard.

    I've done this recently so know it works.

    Last gasp, use some mint essence.

    Thanks , someone else suggested mint essence as well.
