    ¡Mejicano cualquier persona?!

    ¡Mejicano cualquier persona?! (Mexican anyone?)

    Mexican food has to be, by far, my all time fav!
    But apart from "chicken fajitas" or a cold "avocado soup" I've not got allot of dishes that I can do (other then pre-pack )


    So anyone got any suggestions/recipes from México to tantalise these taste buds?

    very simple is get some nachos (doritos) spread them out on a plate and grate cheese over them....bout 40 seconds in a microwave and some guacomoly dip adds a nice finish

    Yeah, that'd work, be careful not to do it too long or you'll make the doritos near the edge dry and too crispy!

    OK, I'm a little scared to post a recipe in front of a chef, but here goes..

    Roughly chop (with attitude) a chicken breast and half each of red and green sweet peppers, and very finely slice 2 each of red and green chilli peppers, carefully removing the seeds (I should probably tell you to wear gloves for handling peppers, but provided you don't pick your nose afterward (or touch any other mucus membranes DAMHIKetc) you should be OK). Fry the chicken until cooked, then add the peppers. Cook for a minute or two then pour in half a pint of chicken stock. Boil it until it's goupy, and serve with loads of rice.. Serves 2.

    Not tried Enchiladas then?
    Easiest way is to buy a kit, or buy the sauce in a jar and some tortillas.

    Cube about 500g of breast chicken, smallish cubes work best.
    Fry gently in a small amount of oil until chicken turns white.
    Add approx half jar of enchilada sauce, simmer gently for about 10 mins.
    Whilst chicken + sauce is simmering, grate 100 - 200g of cheese. My missus prefers 200g, and also prefers a mature cheese, but this can be altered to taste.
    Lightly grease tins to place tortillas in. Mixture fills about 8 - 10 tortillas, so probably 2 tins is best.
    Divide mixture equally between tortillas, spoon into middle, roll up placing the overlapping area on bottom of tin. Spoon rest of enchilada sauce over tortilla's, cover with grated cheese, and bake in an oven at 200 degrees C for about 10 mins, or until tortillas are golden, and the cheese is melted.

    Dead easy - can be served with loads of extras, try a nice lightly spiced rice for example - or maybe refried beans.

    If you buy the kit, just beware that you have to mix the sauce, and to be honest, I think that the sauce already made tastes better. If you stretch the mixture out, you can get 10 tortillas, and thus can serve 5 people easily.

    I got a simple recipe for quesidillas (kinda mexican pizza)
    Get a flour tortilla, spread some refried beans on it, add whatever filling you like (strips of ham or turkey or fried onions and thin strips of fried steak... whatever), top it with grated cheddar, stick another flour tortilla on top, and bake in an oven for 10 - 15 minutes
