    what for dinner?

    doing my weekly shop at asda tonight - i'd cleared out the cupboards over xmas so i've pretty much NOTHING at all at home. gimme a recipe for tonight - serving one (yeah im a loner) and costing less than £3 (although if some ingredients have more than one use - ie half a bag of pasta etc, then i dont mind paying over that by a bit). dont want anything massivly spicey - mild currys etc are ok but nothing superhot. im not a complete novice but i'll give whatever you suggest a go and post pics/results tomorrow

    1 Chicken Breast (2 if you're greedy like me!)
    100gms of Rice
    1 Jar of Uncle Ben's Sweet and Sour Sauce

    Get the rice on the go in a pan of boiling water for about 12 mins with a touch of salt. Cut up the breast(s) of chicken into bite size pieces and chuck into a frying pan with a touch of oil. Cook until all pieces of chicken are slightly browned then pour on sweet and sour sauce. Once the sauce is heated the rice should be cooked then serve.

    Cheap, simple and very quick! One of my fave meals...

    hrmm could do. was thinking something a bit more adventurous. might buy that for tomorrow mind

    incidentally - i said serves one but i normally eat the same amount as 2 normal sittings (high meterbollic rate) so stick in ingredients for 2

    Sorry 5lab, got busy here... anyways, if you fancy something tasty tomorrow or next week when you go shopping, try this one.

    I know it's for 4 people, but just divide everything by 4.

    Salmon steaks normally come in packs of two, so just wrap the other one in clingfilm and freeze it for a later date or, if you want, I'll post another salmon recipe.

    The tapenade in the recipe isn't essential, so you can leave that out, everything else either has a long shelf life or can be used in loads of other dishes.

    Panseared Salmon with soy noodles

    Serves 4 Prep Time : 10 mins Cooking Time : 10 mins

    Ingredients

    For the salmon
    2 tsp. green tapenade
    4 salmon steaks

    For the salad
    2 tsp. sesame
    1 red chilli, chopped
    1 tsp. ginger, chopped
    1 clove garlic, crushed
    1 bunch spring onions, chopped
    100 gram bean sprouts
    3 tbs. white wine
    300 gram rice noodles, cooked
    3 tsp. light soy sauce
    1 bunch chive, chopped

    Method

    Warm a non-stick frying pan over a moderate heat. Rub the tapenade into both sides of the salmon, then carefully lay them into the pan.

    To make the noodles, warm a wok over a high heat and add the oil.

    Fry the chilli, ginger and garlic together for two minutes, then add the spring onions and fry for two more minutes.

    When the salmon is half done, turn it over to finish cooking from the other side.

    Add the bean sprouts to the stir fry and cook for one minute, then reduce the heat and add white wine.

    Stir well and add the noodles and allow to heat through. Season to taste with the soy sauce.

    To serve, ball the noodles onto the plates and lay a salmon steak on each. Pour the juice from the noodles over and around.
