Not exactly authentic but tasty Fajita's recipe:
For 2 people:
For the marinade / coating:
3-4 cloves of garlic
Juice of half a lime (or the whole thing)
1-2 tsp of ground cumin
1-2 tsp of ground coriander
0.5 tsp to 1 tsp of ground pepper (coarse - less if fine)
1/8 to 1/4 cup of flour (maybe less than that - I don't measure it)
Main bits:
1lb chicken breasts cut into thin strips
3 sliced bell peppers (1 red, 1 green and 1 yellow looks nice)
1 sliced onion
Serve with:
Guacamole, salsa and / or soured cream
Flour tortillas
Lots of beer (corona with a slice of lime in the neck of the bottle)
Method:
1) Add the flour, herbs, lime juice and garlic to a large bowl and mix until you get a paste. It's hard to say exactly how you want the paste but too thick and it will burn and fall off the chicken and too thin and it will all stay in the bowl - good luck
2) Add the strips of chicken and mix around loads. If you've got the time set it aside (covered and re-fridgerated) for about 1 hour.
3) Put a small amount of oil into a frying pan or wok and heat on high. When the oil / pan are nice and hot add the chicken mixture and stir fry until the chicken's cooked (depends on how thing you've sliced it - I do it pretty thinly so only need to fry the chicken for about 3-4 minutes). Add the peppers and onion and stir fry for another 2 minutes or so (a good time to heat the tortillas too!)
4) Serve wrapped in a tortilla with either guacamole, salsa, sour cream or chilli sauce (for the hardcore!)
