    Best 3 types of Crisp?

    I'd post a poll, but too many options...

    My personal faves are;

    Kettle Chips - Salt and Black pepper.
    Phileas Fogg - Habanero Chilli Tortillas.
    Doritos - Hint of Lime.

    They are all officially "the bomb".

    Get a bag of King Edwards from Tesco's, a 2 litre bottle of Flora Sunflower oil and a packet of Maldon sea salt.

    Pour enough oil into a big pan to half fill it - no more please. Put a medium heat under the pan.

    While the oil is heating peel a few of the spuds and cut across as thinly and evenly as you can - use a mandoline if you can get one for nice even thickness. Put the slices in cold water.

    Spread a clean tea-towel or a load of kitchen roll out on your worktop, drain the water off the potato slices and spread them out on the teatowel. Dry them off as best you can with more kitchen roll.

    Check the oil temperature. Throw a bit of bread in and if it sizzles and turns brown in a few seconds its hot enough.

    Make sure your slices are as dry as possible then fry them in the hot oil in batches of maybe 6 - 10 at a time. They only take a few seconds to crisp up and you'll probably overcook the first few. As each batch cooks take them out with a slotted spoon and drain on kitchen roll. Scatter with Maldon sea salt crystals which you can grind up between finger and thumb. Now open a can of very cold Stella Artois, sit back and tell yourself how clever you are to make the tastiest crisps you've ever eaten.

    Safety: if your pan was too full, or your oil too hot you might get a spill over the side of the pan and a very scary fire. If this happen to you immediately turn off the heat source, grab your damp teatowel (the one with the potatoes on it) shake the potatoes off and throw the cloth over the pan. Don't touch the pan or the teatowel for a long time..cos it can re-ignite. I've seen it happen. A fire blanket is best but the teatowel will work if it is damp. Whatever you do don't put any water near the fire because it will flare up massively. Seen that too.

    Why is it though that the only crisps most conershops have are disgusting smokey bacon / beef / wotsits / bizarre gimmick flavour ickyness?

    i cant stand walkers crisps, or any others with salt on tbh. it makes me wanna chunder, and takes away the enjoyment of eating a nice big bag of fatty bits of spud by giving me dry-mouth like a git and makin my teeth go funny. eew.

    if war is the answer, then we are asking the wrong question

    This is what happens when you pour water into burning oil.....

    That was about 20 ml of hot oil in a frying pan and about 5 ml of water.... imagine the mess with the 2 liters of oil a chip-pan holds?
