I'm staying in a rented house up in Shetland for work at the moment. The other day the house owner came round with a bowl or fresh scallops for us. She had also done some 'onion sauce' to go along with them.
Removed the roe (or coral) and made sure they were clean (i think they'd been cleaned before, but just making sure)
Sliced them in half down the middle as they were pretty huge and i wanted to make sure they were properly cooked, but not overdone on the edges.
Fried the lot (including the roe, some people don't like this bit) in quite a lot of butter and some garlic power i found in the cupboard (would have preferred fresh, but i wasn't going to the shop just for that). Cooked them on both sides for just a couple of minutes, until they were just starting to brown.
Microwaved the 'onion sauce' which i think was just white sauce with soft cooked onion through it. Very nice anyway. Sliced open and toasted a ciabatta roll.
Placed the scallops on the ciabatta, poured over the rest of the butter from the pan (scraping up some of the bits off the bottom at the same time) and spooned the sauce over the top.
Accompanied it with a bottle of Leffe Blonde.
