    Scallops (incomplete recipe)

    I'm staying in a rented house up in Shetland for work at the moment. The other day the house owner came round with a bowl or fresh scallops for us. She had also done some 'onion sauce' to go along with them.

    Removed the roe (or coral) and made sure they were clean (i think they'd been cleaned before, but just making sure)

    Sliced them in half down the middle as they were pretty huge and i wanted to make sure they were properly cooked, but not overdone on the edges.

    Fried the lot (including the roe, some people don't like this bit) in quite a lot of butter and some garlic power i found in the cupboard (would have preferred fresh, but i wasn't going to the shop just for that). Cooked them on both sides for just a couple of minutes, until they were just starting to brown.

    Microwaved the 'onion sauce' which i think was just white sauce with soft cooked onion through it. Very nice anyway. Sliced open and toasted a ciabatta roll.

    Placed the scallops on the ciabatta, poured over the rest of the butter from the pan (scraping up some of the bits off the bottom at the same time) and spooned the sauce over the top.

    Accompanied it with a bottle of Leffe Blonde.

    there is a lot of salmon up here, you see loads of fish farms in the sea lochs as you drive around. There is also a lot of monk fish, i think it is a major part or theri fishing industry here now.

    Up to shetland in a month with 6 friends. Really up north.
    Will be in Unst, the most northerly isle there. It is a fantastic place, with loads of great beaches for barbeques and swimming.
    And the archaeology and geology is amazing. I've been up a few summers and worked on a few digs. Very interesting.


    Very nice recipe for the scallops. Fresh ones should be quick to cook, and very tasty. I only trust ones I've caught myself though, so don't often get to eat them.

    Funkstar up my way(from Arbroath) they often add sugar to the onion sauce and the sauce can be made with finely chopped spring onion.

    Never been up to Unst.. unless i was then when i was 4 with my family, but i don't remember

    pub in lerwick down by docks called "thullie" opens @ 8am

    we were up there for wifes mums funeral about 3 years ago and was speaking to someone who lives 9 miles away from where we were

    also got asked for proof of age @ 24 in one of the pubs

    wife has some family who live near scallaway and hamnavoe (sp)

    also remember seeing someone from here(hexus) from brae
