    Steak Fest

    A little while ago, I mentioned that there was a good deal on Ribeye in Tesco.

    Last night, I fancied snacking on the 2pdr lump I had picked up. I normally just griddle pan a steak, 3 minutes a side or so but this being 2-3 inches thick, I investigated other methods. I used the griddle pan again, but only to sear all the major faces for 30 seconds or so. I then placed SteakZilla at the bottom of the grill, under a high heat for about 20 minutes, turned it a couple of times and sploshed a little bourbon over it near the end.

    I tried the finger test and it started to resist a bit so I guessed it was ready, a thin knife into the thickest part showed it to be not raw at the centre so I plated it with a little wholegrain mustard.

    I was considerably impressed, the seared outside was a thin, flavoursome crust and the insides where incredibly moist and tender. For quite a large piece of meat, the cook was even and for a first time attempt, pretty much how I wanted it. The indirect grill heat gives it a heat and a rest allowing the juices to really come to the fore. I'd says it's a method to try, as the result was well worth a look. And yes, I did eat the lot.

    sounds good, tho you really should have done what the grill did with a hot pan,will stop too much of the juice escaping.

    got some cattlemans bbq sauce for it aswell?

    Frankly I've yet to have a steak that's too rare, don't muck about with a grill, just sear the outside on a griddle that's as hot as you can get it!

    Have you tried Steak Tartare?

    Minced raw fillet steak, placed on a plate, briefly shown some video footage of a cooker and then served.

    my brother has been seen to eat raw steak coated in pepper,pretty gross if you ask me.

    Yummy, only if its done with nice steak though, with tesco stuff its gonna be pretty manky i would imagine. Only ever had it in restaurants where you know youre getting the good stuff (Once had it with Kobe Beef and it was divine, work was paying though)

    There was an option of Cattleman's sauce, the smokehouse flavour, but I stuck to the wholegrain mustard.

    Normally I would just griddle, but given the thickness I wanted to give it a chance of cooking some all the way through. There wasn't a lot of juice that ran off, the searing did pretty well at stopping any leakage.

    Auran told me about a trick with a big piece of steak, and the fact that your poured bourbon over it near the end is similar.

    He swears that soak it scotch whisky overnight, then grill it hot, then cover it in stilton for the final few minutes cooking.

    I'm tempted but I hate wasting food, and if it tastes cack I'd be gutted!

    I had Venison that had been soaked in Glenfiddich once. It was amazing! And I hate whisky - I mean really hate it. I haven't been able to even smell it since I was about 16, drank too much of it and ended up sleeping in a phonebox!

    nooo you can't do that to a steak...adding anything other than a dash of salt+pepper completely ruins the taste, you want to be tasting the meat with all its juicy glory

    Maybe thats just because I like it as raw as I can go tho, just show it the pan for a few seconds either side and thats it

    Its different if its burnt (what most people call 'medium'), as you lose most of the flavour so need something else to make up the difference.

    Its true that steak is probably one of the best inventions known to man - its one thing I *never* get bored of, no matter how many times I eat it (when I worked on the meat counter a few years ago I ate *alot* of steak hehe)

    LOL to the steak Tartare - have to say that I love Steak but I wouldn't be going any rawer than having a steak Bleu.

    Funnily enough we were eating at The Wolseley, Piccadilly recently and I popped out asking someone to order me a steak ..... they ordered me a steak tartare

    OK so I politely asked the waiter over and told him we'd stuffed up and they cooked me a nice pepper steak.

    He did say that he and chef ate the tartare one in the kitchen and how nice it was - but honest to God the look of it was just too much for me.
