    Killer Guacamole :)

    Found some HUGE avocados over the weekend, decided to resurrect an old recipe, guacamole.

    2 VERY large avocados, nicely ripe.
    1 small red onion, very finely chopped.
    3 cloves fat garlic, finely chopped.
    1 small chili, finely chopped.
    A handful of fresh coriander, finely chopped.
    3 small tomatoes (I had some nice little vine ripened plum), finely chopped.
    1/2 teaspoon sea salt.
    Lime juice.
    Black Pepper.

    Stick the garlic, chilli, salt and some lime juice in a mortar and pestle and mash em.

    Peel the avocados, stick em in a bowl and mash with a fork. Add the garlic/chilli/lime mix, and mix well. Add the tomatoes. Add the finely chopped onion and coriander. Black pepper and more salt if needed to taste.

    I find that this blend gives a wonderfully sparkly feel on the tongue and it is great on hot toast.

    I love making Guacky. Personally don't use garlic, but might give it a try. I probably put more salsa (tomatoes and onion) than you. Glad to see you mash rather than use a blender. I usually dice (roughly 7mm) and mash some of the avocado to bind it all.

    And the Mexicans say that should not even think about making Guacmole without fresh coriander.
