    Pizza Dough

    I've tried several times with several recipes but just can't make Pizzas like the Italians.

    Anyone got any secrets?

    I work in a pizza place
    ASDA bread mix is pretty good for making pizzas. Don't use a rolling pin though, that just de-airs the dough and you dont get good cell structure ()
    Try patting it out, picking it up and slapping it from one hand to the other.
    Oh and dont try spin it on your fingers You only see that on telly and in cartoons and it destroys the dough

    Get this book - Pizza, Calzone & Foccacia and a pizza stone and you'll be laughing...

    Basically you make the dough and rise it twice, then cook it very quickly. Not quite as good as the stuff I had in Italy, but way better than the vast majority of pizza places over here!

    Clingy...what sort of results DO you get?

    Dunno about Pizza Dough.. but I have concocted the perfect pasta as of last night....

    Load of flour - didn't weigh it. 2 eggs, sprinkle of salt & a glug or 2 of olive oil.... mix in a bowl until you get a stiff dough and then knead it until it's smooth and moist, but not sticky - if it;s too dry a tiny bit of water does the trick. REady to roll as soon as youve finished kneading and tastes good even when its raw. Oh yes...

    Hmm - spam pizza toppings anyone?

    However... although it is technically spamming - it isn't actually a commercial site - and the recipes look quite good...

    Have a look at the "about us" page - he's a man with a mission! (it would have been nice if he'd stopped and explained though...)
