    Bread, first time success !

    I'm 52 and have NEVER baked my own bread. Until today that is

    Flippin' 'eck ! It's fantastic

    Used a recipe from an old bread making book, left it to rise for a couple of hours and baked off three 2lb loaves. I'm sat here with a piece in me hand as I type

    still giggling like a kid !

    I did that when I was going through a pauper month...

    I found that the Hovis Seeded White made a yummy loaf and was really easy to make.

    Home made bread is the best.

    I made some using a Hovis ready mixed bag, it was good, but i want to make it from scratch some time. Just not had more than two nights in the flat in a row for about 3 months.

    OK, here's the basic recipe I used -

    A 1.5kg bag of BeRo plain flour (or whatever)
    1.2 pints warm water
    4 tspns sugar
    4 tspns dried yeast
    4 tspns salt
    2 fl oz olive oil

    Add the yeast & sugar to the water and whisk, leave to activate (about 10 mins)

    Sieve the flour and add the salt and olive oil, then use the same method as pastry making to crumb in the oil, takes about 10 mins. When the water and yeast mix is nice and frothy, add it, bit by bit, mixing in as you go to ensure you don't put too much in - the original said 1.5 pints, but 1.2 was plenty.

    Work it in with a fork, then by hand until it's a nice big fat ball of dough.

    Now the hard work - knead it 300 times ! Yep, count them When it's done, it will feel nice and silky. Stick it back in the bowl and cover with a DRY tea towel, leave it in a warm-ish place (but not TOO warm !), and let it rise for a couple of hours. OR leave it overnight in a cool place, it will still rise.

    Take it out and beat it up to knock the CO2 out, then knead another 100 times. Back in bowl, cover, leave to rise for an hour.

    Now take it out, and beat it up again, knead it another 100 times, and divide into 3 - this amount will make 3 decent sized loaves which will fit into ASDA's own loaf tins (£2-24 each). Leave it covered again for one hour to prove, then bung it in the oven on 23C / Gas Mk 8 for 15 mins. Then reduce top 200C / Gas Mk 6 for another 25-30 mins.

    To test one, just knock the loaf out and tap it's bottom, if it sounds hollow it's done.

    LEAVE FOR ONE HOUR BEFORE GETTING STUCK IN !!!!

    ooooo! Jam is something I'd like to have a go at. I have a Delia book with jams and preserves. I keep meaning to have proper look at them.

    Jam's easy, we have two blackcurrant bushes in the garden which regularly give 10 lbs fruit

    A jam kettle is the most important thing to have a very large pan, which I only ever use for jamming.
