These are marinating right now and promise to burn the roof off my mouth
4 large chicken breasts, skinned, boned and chopped into 1" cubes (ish)
red/green/yellow peppers, deseeded and chopped into chunks
mushrooms, quartered
red onion, quartered and peeled into its layers
marinade :
big handfull fresh coriander (cilantro), roughly chopped
2 chopped red chillis (with or without seeds, I use with today)
2 tspns grated ginger
4 cloves fat garlic, chopped
1 tspn salt
1 tspn sugar
good olive oil
juice of one whole lime
1 tspn paprika (smoked if U got it)
1 tspn ground cinnamon
Blend or use mortar and pestle on the marinade mix to get a fine paste. Stick the lot in a big bowl and mix thoroughly. Leave in fridge for as long as you can, pref o'night.
Heat oven to max (220C, Gas 9), or use a barbeque. Stick the mixed stuff on skewers, be creative
A final drizzle of olive oil, then cook them for aboiut 15 minutes, or till getting burnt bits round the edge.
