    Prawn Curry

    Kalmino Patio Parsi Prawn Curry

    You Will need:
    3 large onions, finely chopped
    4-6 cloves of garlic, crushed
    1 tsp chilli powder
    1 tsp turmeric
    4-6 Curry Leaves
    1-2 tsp tamarind paste
    1 tbsp fresh mint (or 1 tsp mint sauce)
    1 tbsp brown sugar
    450-500g fresh prawns or shrimp
    1 large bunch of fresh coriander

    To cook:
    Heat some oil in a wok or pan & fry ONE of the chopped onions.
    Once browned Add the Garlic, chilli powder, turmeric & a little water (or rice wine if u have it).
    Turn down the heat & simmer for 3 or 4 mins.
    Next, add the rest of the onions.
    Once they become translucent, fold in the tamarind, mint, sugar & salt to taste.
    At this point u can add a little water or wine to stop things drying out.
    Simmer for about 5 mins.
    Next add the peeled & dried prawns/shrimp & again, a little liquid if required.
    Now fry until the prawns change colour, Do NOT overcook!
    At this point add the shredded coriander leaves & stir fry on a high heat for 2-3 mins to thicken the sauce & serve hot.

    To add a little extra colour & flavour garnish with lemon & lime zest & a few fresh green chillies.[B]

    From my experience, if you're using dried shrimp, give em a good soaking first as they are very salty.

    Anyways, copied this into the cookery book.
