    Stew - with mixed game

    Basically I need an idea about timings etc. I usually use my slow cooker, but there's not enough room for bulk making.

    So, we have 600g of mixed game meat and I'd like a recipe for stew.

    I can do any veg, but ideally I'd like to leave out swede turnips and parsnips - and neither me nor Hex like em

    I'm useless at knowing browning and stuff, so any tips would be gratefully appreciated.

    I tend to fry off some onions , celery and carrots , then brown the meat. Add a little flour to coat the meet , then add stock & root vegetables - try squash or sweet potatoes for something different. Stick some port in instead of red wine for a really nice rich gravy - maybee a few mushrooms towards the end of the cooking time.

    Port is good, as is Rioja or sweet sherry. as moby said, make sure that veg is caramelised nicely to add depth to the flavour. White cabage even would also work well, has a nice nutty flavour if fried well. Also, & this sounds mad, just a wee teeny hint of fish sauce later on in the cooking. It's a great flavour enhancer. I use a bouquet garni of sage, bay, rosmary, coriander, taragon & thyme in mine.

    Agree with moby, esp with coating with seasoned flour to brown off the meat. Its important to seal it well to prevent the juices all leaking out (or so they say).

    Id also use a really good red wine, not a cheapie, it has to be good enough to drink to use it in cooking. I'd also add some brandy near the end and flame it, then add a little fresh cream

    Well I made it - the browning turned into my usual "toss it into a hot pan and pray" but it seemed to work, and neither Hex nor I are dead yet...
