Looking to do a really good chrimbo meal but without turkey(as I don't like it).
My options are beef, lamb, chicken or pork.
Anyone got a really good recipe for any of these. Has to be exceptional as it's for christmas.

I do know everything, just not all at once. It's a virtual memory problem.
We are having Goose this year
Had a bit of trouble finding somewhere local that does goose but we found a farm. Bird is ordered and we`ll get to pick it up on the sunday before xmas day![]()
Duck makes for a different Christmas dinner, and quite frankly doesn't need a fancy recipe because many people don't tend to have it that often.

We're having Archaeopteryx this year. Tesco had them half price.
My local farm shop has been selling Meleagris gallopavo at half price if you catch it yourself. I have been trying to get mine for the last three days the sod keeps running off but the shop owner says sale or return. How the hell can I return it if I can't catch the fat sod.

Chicken wise , try a nice free range organic one, or if you have a good butcher a well matured forerib of beef.

Another Vote for Goose, I bullied my Mum into doing one the last time I was at the Old's for Christmas and it was fantastic, the roast potatoes are to die for!
It's fairly straightforward to roast too, the gotcha is it releases a lot of fat, so you roast it straight on the grill/shelf of the oven, with a roasting dish on the shelf below to catch the fat, that way you can change the dish when it fills up.
We also had Venison one year which was also good, and the leftovers were the best.
They told me I was gullible ... and I believed them.
