Ingredients

Wok - Best in this

5-6 Med - Large Potatoes
5-6 Leeks
Low Fat Cooking Spray
Pinch of Nutmeg
Milk
2 x Veg Stock Cubes


Skin 5-6 medium to large Pots cut into cubes,

Cut the leeks and place lubed up Wok ()

Dry fry for 2 mins

add enough water to cover the Potatoes and Leeks and and add the 2 stock cubes

Season where needed (ie Salt & Pepper)

Leave to simmer for 5-10 mins or until the potatoes are soft(ish) or however you like them

about 2 mins before its ready add 150ml of Milk and a pinch of nutmeg

Leave to simmer a further 2 mins and you should have a fairly good consitency, take of the heat and server.
