Anybody got any hints, tips or full blown recipes for venison? Im about to be given some by a friend, whos just butchered a deer. Want to try something a bit different as I usually just fry game with some garlic and olive oil.

What cut are you getting? A really good one is strip filet roasted ( still pink in the middle) then served with homemade Spaetzle and a pear poached in red wine, a good brown sauce made of venison stock would be vital too. I dont have the exact recipes unfortunately but when I was training as a waiter our Master chef used to do it and it was to die for.
