    How to make pasta

    I'm good at this now.

    Ready? (Keep everything, including you, DRY....NO WATER< and no humidity. Do this part of your dish when you need the pasta.. dont keep it for hours after its made Once it IS made, flour it to keep it dry.)

    100g plain flour
    1 egg.

    Put both these into a food processor with a blade in it. Blitz until it looks like bread crumb.

    Turn it out onto a WOODEN chopping board, with lots of flour on it, flour your hands, and massge/knead the dough, and keep adding sprinkles of flour to stop it sticking. 1 minute of that and you're done.

    Really. That's it. Pasta. (I use a pasta roller from here on in, and make Tagliatelle with it, sprinkle with flour, put on a plate to await cooking for a few minutes wile the water boils, and then it takes 2 minutes in the salted water. )


    Roll it out, as it gets thinner, cut it into manageable sizes for more rolling. Keep sprinkling flour on your hands and the board to stop it sticking.

    If you've got a pasta roller, use it. If not, use the sheets of pasta for whaever yuo want. Lasagne. Ideal. Ravioli....just put a little spoon of your contents in the centre of a square of pasta and egg the edges and fold over and crimp the edges to seal

    wow u go to all dat effort. i just boil it n add dolmio. but in restaurrants it tastes well nice, im sure they make it like u do. u hav any pics so we can like see?

    Using a blender is CHEATING Knead it like a man!

    I make it with an egg or 2 depending on how much I need, a splash of olive oil and a pinch of salt. Mix it up in a bowl until you've got a stiff dough, then whack it straight onto the work surface and start kneading it until it's smooth and silky - moist but nt sticky If it gets too dry, add a drop of water. You know it's ready when it doesn't stick to a clean non-floured surface. Then roll it out to the required thickness with the pasta roller
