all out of tomatoes, but have lots of onions, so this strikes me as a cunning plan!

wouldn't be too different from onion gravy would it - prob quite nice with a bit of cream and maybe mustard added for a bit of bite - just slice the mushroom really thinly and cook really slow for ages in a (big) dod o butter, add a liitle bit of flour and cook a little bit longer, onions should just about be breaking up now and then add your cream and maybe some water from whatever veg. whatever.
Try sauteeing off the onions until an even golden brown, then add a splash of white wine and equal amount of veg or light chicken stock. Reduce by half, then add the cream (use double or whipping) and then reduce until thickened adding a bit of mustard and some soft herbs (tarragon, parsley, sage) as the sauce starts to thicken.
Check the seasoning and serve.
