Thought id post up this recipe for you, since it's one of my faves and is very easy to make

Ingredients: (sorry nothing is exact, just add more of what you like, less of what you don't)

Rice (any type will do, doesn't have to be special risotto rice like arborio)
Onion (finely chopped)
Garlic (finely chopped)
Curry Powder (just the bog standard cheap stuff you can buy from supermarkets)
Turmeric (if your curry powder doesn't include it)
Frozen Peas
Red Pepper
Cherry Tomatoes (halved)
Chicken Stock (hot)
Salt
Pepper
Olive Oil
Butter
Cream/Creme Fraiche

1. Add your onion to a pan with a little olive oil and butter (butter for flavour, oil to stop it burning) and fry gently for about 5 minutes or until becoming translucent, then add garlic and fry for a further 2 minutes.

2. Add your rice and fry this gently until it turns translucent also.

3. Add a ladle of hot stock, the curry powder and turmeric. Also add frozen peas, and chopped pepper. Gently simmer, stirring quite regularly.

4. Wait until the rice has absorbed the stock before adding the next load, and continue until the rice is almost cooked. If you run out of stock just use hot water.

5. About 5 minutes before the rice is cooked, add the tomatoes.

6. When the rice is cooked, and all the stock absorbed, check for seasoning and add salt/pepper as necessary (if you are using stock cubes or similar, they will probably already contain salt, so be careful not to over season here)

7. Finally (health freaks watch out), stir through a small knob of butter, and a small measure of cream to give it a lovely creamy texture.

8. All done, enjoy


Variations:

Plenty of variations to this one, but a few you can try are...

Different coloured peppers, or change the veg around depending on what you have. Adding spinach is also nice.
Try adding chillies to give it some extra heat and flavour
Add some chopped coriander to give a fresher flavour
Add chicken, or some other meat if you like, or if you are a veggy, use veg stock instead of chicken.
Add a squeeze of lemon/lime juice for a nice tangyness.
