    Preheat BBQ to 150-160 deg C - set the grill for indirect heating. Easiest way to do this, is to place a tinfoil tray (proper one, which you use for cooking, rather than something that looks like a blue peter creation) fill with manuka or hickory chips and soak the wood chips.


    Pork ribs all around (Western cut or just large chops)
    10-12 large garlic cloves - minced
    Salt & pepper to taste
    olive oil
    large handful of fresh rosemary
    500 mil (or a pint if you're needing extra sauce) of your favourite bbq sauce - I would recommend Stubbs - best flavour all around. Nice and smoky. If you can't get Stubbs - use regular bbq sauce and add a couple of dashes of liquid smoke.

    coat the ribs in olive oil, salt and pepper each side, then pat minced garlic onto all sides of the meat.

    place a baking or roasting dish on the grill, pour in olive oil to coat the base, and heat until near smoking.
    Lay the ribs or chops in the pan, and sprinkle rosemary on top. Place a lid on the pan, close the bbq lid and bake for 1 and 1/2 hours, turning the meat occasionally, and adding water to prevent the meat from drying out.
    Open her up, cover the meat on both sides with bbq sauce, cover up again and bake for another 1/2 to an hour.

    Serve with slaw, corn on the cob and beer!
