    Things to do with Chicken

    I made a nice roast chicken yesterday for dinner, had some of the cold meat in a sandwich for lunch, I'm going to use some in a stirfry and some in jambalaya, and the remainer is currently being made into stock....

    But I need some new ideas what to use chicken for generally and especially leftovers. I might make Coq au vin next week, but any other suggestions?

    Curry? Chicken ceaser salad
    Chop it small, add to cous-cous, use it to stuff peppers & bake.

    Sorry, didn't mean it like that

    Lots of ideas there, but they're mainly "from scratch" things, not cold chicken ideas

    Plenty of things haven't been covered there either

    A chicken, bacon and mushroom risotto (sp?) wouldn't be too hard.

    Im a big fan of the horizontally sliced chicken breast filled with blue cheese and bacon. Wrap it in bacon and slow cook it in the oven This can be taken one step further by deep-frying it after it has been cooked. Then add cheese to taste

    cut up some onions and garlic, throw it in a pan and add some cajun spices, good to go

    Curry is a good idea, i generally have a roast on the sunday... then a curry on the monday.

    All you need is the sauce and rice; the sauce can be bought or made from scratch if you're adventurous.

    he's right.. AND you could make the chicken stock from the left over carcass. Put it in a pan, with a carrot and a stick of celery, and a pint of water, put lid on, boil gently for about 2 hours, topping up water to keep the pint of stock. Drain, dont use the vegetables, they're knackered.

    Chicken stock... not from a cube.

    (I then cool it until it's mildly warm, and pour it into ice cube bags, and tie them off, freeze them and use them for risotto's like Knoxxy suggested)
