Rediscovered food of the day - Bubble and Squeak!

I sometimes forget about food for a while , then shock myself at how good it is. Who'd have thought that a bit of old mash , an onion and some cabbage could be quite so tasty!

I've done variants with bacon before, and a couple where I've rolled up balls of B&S , chilled then deep fried.

    any other variants ?

Our is a leftovers version so whatever is left goes in.

Of course, we like it with sprouts, so there are always sprouts leftover. Even to the point of buying an extra bag.

Have used cauli, broccoli, peas. Won't try runner beans again!

I just shove everything in the mashed potato pan, mash it, lob it in a wok with some olive oil and fry it up. Mum still uses lard and so do I if I've been baking. There's nothing like it.
