    Question Black Eyed Beans ?

    Hiya Chefy folk,

    I have just cooked a sortof stew using Black Eyed Beans (from dried). I first soaked them overnight I cooked them in the sauce for a a good 1hr 45mins on a low heat and they seem a little bit hard still (not solid hard sortof like uncooked baked bean texture!) Is that how they are sposed to be or should I cook em for longer?

    Anyone ever cooked Black Eyed Beans from a dried pack before and if so how long and on what heat did you cook em for ? What texture are they sposed to be ?

    Also will they kill me if I eat them with a bit of a bite to em?

    Aye, i've used them a number of times both from dried and pre-cooked by Asda in a can. I normally soak dried overnight ( at least 8 hours) then fast boil them for 5 minutes and remove the scum, then cook for 2 hours, but then i like them soft as part of a 5 bean chilli...

    I've no idea if they are poisonous if not fully cooked, i assume it's more likely to give you gas than kill you, but don't take my word for it!

    My mother cooks these beans and she uses a pressure cooker on high heat for roughly that amount of time. Sounds like you needed more heat and pressure if you can.

    I think the problem was that they were a bit old (nov 2007!) I ate them anyway and was a bit windy but I am still alive so no harm done. Next time I will do the power boil after I have soaked them overnight and then stew them for a couple of hours I reckons, oh and buy ones that are not savagely out of date instead of using ones from the back of the cupboard

    Wolfsbane2k is right, like chickpeas you should boil them first & then simmer them so they're not hard.

    Soaking over night, full roling boil, then a simmer?

    I think I'll stick with buying peas and beans pre soaked in tins to be honest

    Which reminds me, I need to go stock up.

    Soak them, they should be pretty soft once they're cooked.
