A good starting point would be one of Mahdur Jaffrey's. They are all nice but she does sometimes use a few too many ingredients. My wife is Bengali so we have a few at home that we have found whilst being in Calcutta, but the problem is that there is no 'generic' indian cuisine. At least with one of the Jaffrey books she tends to tell you where the recipe comes from and what would go with it!
I have never seen a Nepali cookbook though! I think they eat a lot of rice and dal...

You could also try Anjum Anand's books, she had a series on the BBC quite recently that looked good.
Cooking with My Indian Mother-in-law: Mastering the Art of Authentic Indian Home Cooking
by Simon Daley also looks pretty interesting although I have no idea if it is any good, but it sounds promising!
I have no idea about Nepalese cooking but this might be of some use: Joys of Nepalese Cooking - A most comprehensive and practical book on Nepalese Cookery by Majupuria Indra.
