Totally agree about adapting. But I'm not so sure it's about shop versus homemade. Homemade varies hugely too, according to the exact recipe, and the precise ingredients. But for your bread, I guess whatever works is what works. Which, as you say, is about adapting.

And, as it 'appens, I've got my beady little eyes on a rather tasty looking Panasonic breadmaker right now. Not cheap, though, and whether it's worth it or not is putting me off, when there's so many cheaper models out there.

Make sure you get one where the blade flips down for the actual baking or you end up with a huge hole in the loaf, making any sort of sandwich making or toasting where potentally 'drippy' ingredients are involved tricky! Also think about how you are going to slice the bread. A knife is all well and good, but its a pain for getting even sized slices! We use one of those rotary bladed slicer things. In fact it needs sharpening- that might be part of the bobbly bread problem!
    Not around too often!

Good point about the blade. Hadn't thought about that. And I am very partial to toasted sarnies.

True enough. But I can't stand cooked cabbage ....... yet am rather partial to spring rolls. I'm not a lover of cauliflower, but generally enjoy a cauliflower cheese. I'm sure there are many more examples of that too.

I guess it's about concentration. I use L&P pretty lightly, because I like it to add a "tang", not to drown the flavour of other things. I use Branston the same way, and get the finely-chopped "sandwich" variety because the chunks in the original are too big for me.

Anchovies on their own? Nope, not for me. Almost as bad as brussel spouts!

<sits back and waits for the argument to commence>

Why would I bother having 6 of them if it was a tiny scraping? slap it on, plenty of margarine, lovely stuff...
