    Butterflied Leg of Lamb

    Sent in by Scottyman for entry into the cookbook

    Traditional Summer bbq fare:
    Take one fresh leg of lamb (not mutton or hogget) - make sure it's huge, as it will all be eaten. Either butterfly it out yourself (if you have the time and the inclination) or get your local butcher to do it for you.

    3/4 cup Olive Oil
    1/3 cup Red Wine vinegar
    a couple of large splashes of Balsalmic vinegar (bit under a quarter of a cup - to taste)
    a large handful of rosemary, mince about a quarter of it.
    2 tablespoons Dark Soy Sauce
    2 teaspoons Worcestershire sauce
    Large bulb of garlic, half minced, half in slivers
    Sea Salt and fresh ground pepper to taste.

    Trim off the excess fat (leave a little for a nice crust)

    Cut small slits into the meat - about an inch apart. Stuff with rosemary leaves and garlic slivers. Save quite a bit to place on the meat during cooking.

    Whisk all the ingredients in a bowl, except for the rest of the garlic slivers and unminced rosemary.

    Place the meat into a large freezer bag (make sure you can seal it)
    Pour in the mixture, remove all the air and seal the bag. Gently massage into the meat (get into it - make sure you do it for a good 10-15 minutes - this isn't foreplay chaps! )
    Place in the fridge for 2-3 hours, before removing the bag and letting it raise to room temperature.

    Get the BBQ to a medium heat (works best with covered grill, but open charcoal works fine too)
    Drain off the marinade, place meat on bbq, and cook until pink, marinading occasionally. Place the rest of the garlic and rosemary on the meat as it's cooking. You really don't want to overcook this one.
    Once cooked, place on warmed serving platter and cover in tinfoil. Rest it for 10-15 minutes to ensure it's nice and tender

    Slice into .5 cm strips and serve with a Spinach & Clementine salad with new potatos and maybe some nice bbq'd tomato, onion and courgette mix.

    this very tasty... will post another variant which has a completely different flavour, and can be done with only an hours marinade time - and it's ideal to bbq on the beach. Just got to transcribe the bit of paper the recipe was scribbled on!

    Another Marinade for Boned Leg of Lamb...

    1/3 cup of olive oil
    1/2 cup lemon juice
    2 tablespoons red wine vinegar
    4 cloves crushed garlic
    2 teaspoons dried oregano
    2 tablespoons parsley
    2 tablespoons dried basil
    1/4 cup soy sauce

    - whisk the marinade well, and massage into the meat. marinade for ideally 12-24 hours, but one hour in the fridge is fine.
    When cooking garnish with a couple of rosemary sprigs and a couple of sprinkles of extra garlic.
    Bbq or cook in the oven at 190 deg C for 40 mins.

    It's also been voted by friends and family as the best ever marinade for lamb - just got to remember what's in it!

    Man, that looks gorgeously juicy!... I'm fer sure going to be doing this one sometime this week if we get some decent weather. I've just re-assembled my barbie for the summer, (believe it or not, I'm actually looking at fitting some speakers to it too, for in-garden mp3 streaming!)

    Now that's a worry - considering that I can go out in public with no shirt, and people assume I'm wearing a fleece!
    The cool part about webers is that you can get modular attachments - like an underbar lamp to illuminate the bbq at night - but built in speakers are definitely a cool plan!
    I've got an AN7 board, so fiddled about with the audio routing, so I'm just sending front speaker output through my rear speakers which are mounted about the BBQ.
    Just got to get some marine speakers fitted now, which will sound much better.

    Ok, I'm lost there... I was just going to run some wires up the garden to a couple of car speakers I have lying about.....

    Or is that the same thing, but in layman speak?

    Hi guys.

    Any pictures anywhere on how to butterfly the lamb? Never tried it before, but those pictures look amazing!

    will dig out the streaming video clip -it's quite handy and shows it step by step - but you'll never be as fast as a butcher¬!

    They should always do it for free, or call your butcher in advance and just say you wan't it butterflied... but not marinated in any way.
