New pork dish - DIY recipe
Hi all,
I just cooked myself up a new dish using a porkchop - it was really nice so I thought i'd share. This is my first time at writing up a recipe, so bear with me.
Porkchop with a caramelized apple top, served with a port-wine and clove apple sauce and buttered savoy cabbage
Prep time: 10min
Cooking time: 20min
Ingredients:
1 porkchop per person
1 apple per person
Savoy cabbage
Good port
Powdered fennel
Powdered ginger
Runny honey
Herbes de Provence
Rock salt
Black pepper
Prep:
Peel the outer leaves of the cabbage, saving one in which to serve the cooked cabbage. Chop the cabbage in 1cm strips and separate the pieces, placing in a pan.
Cut into the skin on the porkshop at 1cm intervals so it crisps up nicely. Place into a baking tray and season on both sides with herbes de Provence, salt and pepper.
For each apple, core, cut in half, and with one half peel and chop into 1cm cubes, with the other cut into thin slices with the skin on.
Cooking:
Put 1 tablespoon of honey in a small frying pan on a medium heat. Add fennel and ginger powder to taste, and add the sliced apple. Cook for 5 minutes.
Put the cubed apple in a pan with a little water, port, and a few cloves to taste, and put on a medium heat. Cook for 20 minutes, adding the juice from the pork every time you turn it over.
Grill the chop for 5 minutes on each side to crisp the skin, then place the sliced apple over the top, and pour on the honey mix. Place in a high oven for 10 minutes.
Boil the cabbage for around 5 minutes (to taste). Add a knob of butter, salt and pepper, toss in the pan then serve in the leaf from earlier
Plate up and enjoy, ideally with a nice red wine. I'm not doing carbs in the evening so I didn't do anything, but mash would go I think, or maybe sauteed potatoes.

Hi, I'm not the biggest pork fan, but that does look really good, thanks for posting I will try it when I get around to buying all the ingredients.

That looks pretty decent. I'm still struggling to find a butchers around here.
The one nearest to us was excellent...the trouble is he blatently was doing cocaine in the back (seriously)..
