    Baked Bananas

    Baked Bananas

    Serves 4
    Prep time: 10mins
    Cooking time: 15mins

    Ingredients
    4 bananas, peeled
    15g butter melted
    25g soft brown sugar
    25g sultanas
    grated zest and juice of 2 oranges
    4 tsp dark rum (optional)
    25g desiccated coconut (or fresh coconut , cut into strips with a potato peeler), lightly toasted (optional)
    4 tbsp crème fraiche
    mixed fresh berries to garnish

    Method

    Preheat the oven to 200°C.

    Melt the butter in a small frying pan, add the sugar, sultanas, orange zest and juice and rum if using.

    Bring to the boil and simmer gently to let the flavours infuse and the liquid becomes syrupy.

    Line a shallow bowl with foil to make a cup shape and place a banana in the middle.

    Pour over the juice and sultana syrup, taking care to coat the banana, but leave enough syrup for the other parcels.

    Close the foil over the top of the banana, rolling it to seal, then place on a baking tray.

    Repeat with the remaining bananas.

    When all the parcels are done, bake in the oven for 15 minutes.

    To serve, remove the tray from the oven and place a parcel on each plate with a small pile of fresh berries and a spoonful of crème fraiche.

    I barbecue bananas either in their skin or in foil. Guess I can adapt this for the barby?

    Yeah, this'll work fine on a barby, though I've found it best to throw them on once the coals have died down a bit, as the barby is starting to cool off.
