Paprika Pepper Potato Chicken ( say that after a few beers)
For 2
1.5 tbsp Paprika
2 tsp Worcester Sauce
1 tbsp fresh chopped Thyme
4 Boned Fresh Chicken Thighs
3/4lb Red Potatoes , Thinly Sliced
1 Chopped Green Pepper
1 Red Onion Chopped
2 cloves of Garlic
Olive Oil
1/2 Pint or so of Chicken Stock
Mix the paprika , Worc. Sauce Thyme and Season
Rub into the Chicken , Cover and Set aside
Combine the Peppers , Spuds , Onion and Garlic & Season.
heat the oil and fry the chicken for about 5 mins
Take the chicken out of the pan and add the veg , fry this for about 5 mins , turning well to coat the veg with the juices.
add about 1/2 the stock , bring to the boil, cover and simmer gently for about 5 mins.
add the chicken and stir. then add the rest of the stock and cook for about 20 mins.
if after 20 mins, the potato isn't cooked , add more fluid.
To thicken up the gravy , remove the chicken and reduce.
Serve with blanched Mange Tout peas.
