Got some beef mince defrosting in the fridge, anyone got any cunning recipes for burgers?
I can't remember the recipe exactly, but basically....
- Mix the raw mince with fresh chopped green chillies and quite a bit of parmesan cheese (or pecorino).
- Roll them into meatballs and fry until cooked.
- Make a quick tomato sauce (gently fry a few onions, add a tin of chopped tomatoes, some tomato puree and a bit of salt)
- Serve meatballs on spagheti with the tomato sauce.
- Top with shaved parmesan (if you're feeling flash!)
I know thats not quite burgers, but you could always flatten your meatballs (!) and have them with juicy tomatoes and salad in a bun!
I'm quite hungry now... I think there's some mince in my fridge too.....

Breadcrumbs (from bread - not those weird orange things)
1 Egg
Onion
Whatever herbs and spices you fancy
Not sure of exact amounts but as a guess for 1lb / 500g of mince you want 1 egg, 1 onion and 1-2 slices of bread grated up then just mix it all together.... Works better if you can leave it mixed up for half an hour in the fridge (may fall apart otherwise). Tend to use basil and oregano but anything you fancy really.
