    seeking fishy inspiration

    i have 400ish grammes of salmon fillets in the fridge, plus half a bowl of home-made refried beans. can anyone think of an exciting and innovative recipe which involves both of them?

    Salmon stuffed with spiced beans

    Serves 2

    Ingredients

    2 200g salmon steaks
    ½ tin refried beans
    2 tbsp olive oil
    4 tbsp mixed soft herbs (basil, parsley etc)
    4 tbsp mayonaisse
    1 tbsp sweet chilli sauce

    Method

    Pre-heat the oven to 200 degrees Celcius.

    Place the refried beans in a bowl and stir in the mixed soft herbs.

    Place the salmon on a chopping board and using a sharp knife, carefully cut each steak in half horizontally.

    Lightly season each side of the four pieces, then spread the refried beans evenly over one piece from each steak.

    Warm a frying pan over a high heat and add the olive oil, then carefully lay the salmon ‘sandwiches’ into the pan to seal off on both sides.

    Allow the fish to seal for no more than a minute on each side before transferring to a non-stick baking tray.

    Roast in the oven for 10 minutes.

    While the fish is cooking, mix the mayonnaise with the sweet chilli sauce then dilute with a little water until it is the consistency of runny yoghurt.

    Remove the salmon from the oven and carefully lift onto the plates. Drizzle the sauce all around and over and serve with boiled new potatoes or a tossed green leaf salad.

    a couple of uncreative changes due to supplies (i.e. no potatoes, mayonaise or sweet chili sauce): the refried beans arfe made with some random japanese bottle i found in the cupboard labelled Bulldog Sauce rather than with the thai stuff, instead of potatoes etc i'm using wholewheat pasta shells with a spoot of pesto for moisture & a bit of flavour.

    this stuff is gorgeous. it's the soft spices that really hit hardest, interestingly. tho the salmon is absolutely gorgeous :x
