Christmas Turkey Recipes ?
Ok .. i'm not the greatest fan of Turkey (A bit too dry for me), but im a stickler for tradition so we are having it anyway,
I do the usual trick of turning the bird upside down to keep it juicy.
but anyone got any tips for making it that that little bit more tasty Ie. wrapping in bacon that sort of thing?

I watched Jamie Oliver's Christmas program last night, and he used a flavoured butter and put it under the skin. The recipe can be found here: -

Well depending on how many there are I find getting a turkey breast joint and a drum stick or two for dark meat.
That's what I did last year for 4 people, came out great and we had very little left over, so didn't have to spend the next 3 days having turkey leftovers. ;)

i am going for this Jamie inspired recipe shoving stuffing between the skin and the breast, my 1st proper Xmas dinner since losing both the mothers last year, just trying to figure out what veg to serve with it.
as for the turkey, i went to my local farm shop last month and placed an order for a slow grown free range bronze bird, more fat to stop it drying out if its not been fast grown in a pen on steroids.

My trick is to buy the pre-processed turkey rolls with stuffing inside. They cook up far better than real food :)
