Chop decent chipping spuds, microwave them at max for 5-6 minutes, depending on batch size. Then leave them to stand for about 15 mins to let all excess moisture disappear. Toss them in a flavoured oil - goose fat is great, duck is 2nd best, olive oil is 3rd. I usually add a dollop of sweet chilli sauce and a bit of salt and pepper. Then bung them in a scorchingly hot oven, gas mark 8 or better, for about 12 minutes.
