Re: Anyone make there own Pizzas ?

My flat did it a few weeks ago. It's definitely better than a typical supermarket pizza, although I wouldn't go as far as saying it was better than an expensive one, like the Pizza Express frozen pizzas.

We just made the dough ourselves from a recipe out of a book. Whacked all the ingredients in a bowl, mixed it around, then flattened it ourselves with a rolling pin, or in reality our hands and empty wine bottles. If I had the recipe I would pass it on, but I wasn't involved in that bit.

Point is, definitely worth a try, and you definitely don't need any specialist kit.

Than the supermarkets? I'd be disappointed with anyone here who *can't* make a nicer pizza than you get in a supermarket You don't need a bread maker - indeed they're not very good for making dough that won't be baked into a loaf.

Bread making is pretty straightforward: flour, yeast, salt, warm water. You can get dry active yeast that goes straight into the flour without any messing, and the yeast packet normally has a basic bread recipe on it that will work fine for pizza bases. The only thing you might want to think about is putting a big glug of olive into the dough when you add the water

An electric mixer with a dough hook is the best lazy way of mixing & kneading, but personally I just use an ordinary table knife and work the dough really well with it (like a manual dough hook!). There are whole books dedicated to the technique so I won't go into detail here - a google search should give you plenty of pointers. Leave the dough to prove for about 45 minutes for pizzas, then knead it for a few minutes, roll it out and push it onto your baking trays, then leave them to stand for about 20 minutes before putting your toppings on. It'll be by far the best pizza you've ever tasted

Re: Anyone make there own Pizzas ?

well, you dont even need to make a pizze base. i quite like to put tomato puree, cheese etc on ciabatt cut in half, or any bread for that fact. Grill one side first then put topping on and grill that side too..
When you make youre dough aswell, if you make a bit more dough than you need, so you'll have a larger base than you want, you can put cheese round the edge(in rectangles) and fold the extra base over it and join the rest to make a stuffed crust too..

Ok so if I dont need a bread maker, will leaving the dough at room temperature make it rise, or would I need to put it next to a radiator maybe ?

A bit of additional heat can be helpful, yeah, although with the weather at the moment I doubt you'd struggle with a warm room.

Re: Anyone make there own Pizzas ?

Found this guide from a guy who has been making pizzas for years and owns pizza shops, so would like to copy his recipei. Am confused all ready tho! lol just watch the first 10 seconds and when he is talking about the flour he says " 1 and 2 thrids cup of flour "..... So my question is how much flour is that exactly ? lol... a cup as in a tea cup or a mug ? or the FA Cup ?

A cup is a bit of a bizarre US measurement of volume, it's roughly 230-40ml but it's not exact. It's main use is so you can get the right proportions of ingredients without having to do any 'complicated' 'math' [sic].

Re: Anyone make there own Pizzas ?

You can get Napolini pizza bases ready made, saves having to mess making the dough, they are tasty and functional.

For the tomato sauce get a tin of chopped peeled tomatoes and put in in the blender, also add a good amount of the thick tomato puree and a decent teaspoon of Oregano & Basil, also add a little oil then blend it up till smooth.

For the cheese go for grated Mozarella as it has that nice stringy texture and mix a little of the white mild cheddar in with it for taste.

Re: Anyone make there own Pizzas ?

Whenever I do a pizza I just get the ready made bases (I do like a thin crust though), you might want to try some ketchup (Heinz for preference) after you've put on some tomato purée adds a nice bite to the pizza (I only found this out when I ran out of purée while making one and needed to cover the rest of the base).

Re: Anyone make there own Pizzas ?

I use the Jamie Oliver pizza dough recipe
Along with the Jame Oliver tomato sauce recipe

Which is strange, cause I can't stand watching him on TV

Have always got a very good responce from friends and family and have recently been bought a pizza stone so will have to give that a crack, maybe even on the BBQ

Cook your dough for a few minutes before adding the sauce; stops it getting soggy.
