    Things to do with chillis

    Hi there,
    I've been growing cayenne chilli peppers this your, and they've grown beautifully! So, I'm looking for things to do with them. I don't mean recipes with chilli in them, but more ways to preserve them. So far I'm thinking:
    Drying
    Chilli Jam
    Pickled Chillis
    Chilli Oil
    Anyone out there got any other ideas?

    dry them Increases their heat, and if you grind them after drying, thats your cayenne pepper

    +1 for Drying.

    Freezing works too, they'll stay fairly fresh for about a year in the freezer.

    Beware about making chilli oil from fresh chillis, there is a chance for food poisoning if its not prepared aseptically. Your best bet is to make chilli hallowed oil from dried chillis if you want to make oil I think, much safer and easier.

    I made this last year albeit not with cayenne peppers,turned out better than expected! I've no idea which chillys I used I guess theres some standard gift red chilli plant out there, anyway.

    Ah, I've got that Jamie Oliver book, and I love chutney, so that's a good option. I will be crushing and grinding the dried ones for storing. I had also forgotten sambal oelek:

    grab a reusable salt mill, about 80p from home bargains. when its empty you have a chilli grinder

    unless they sell the peri peri shaker there, i love that stuff!

    As has been said dry them, I have dried ghost peppers 2+ years old now and they are showing no signs of going bad.

    I've got no end of chilli varieties from this year .

    Some of them are still ripening, and ive already got loads in the freezer .

    Gunna get a reusable salt mill like suggested as mortar and pestles can be quite expensive.

    Although i dont have the recipes to hand they are pretty easy to look up.

    Chilli Coleslaw - this is awesome stuff, but i usually dont add the lemon juice like most sites tell you too.

    Epic fail with one of my jars of Chilli Chutney - mould!

    I sterilized the jar, and heated the chutney to boiling point, and sealed it properly after, and left it in a cool dark place after cooling in the fridge - what did I do wrong? Such a shame

    Was the jar still hot when you put the chutney in? I find it best to give the jars a good wash in hot water, dry them with paper towels or a clean tea towel and then I place them upside down in a cold oven and heat them until the oven reaches about 160c (about gas mark 3 or 4). Meanwhile I wash the rubber in hot soapy water and then pour boiling water over them. I time it so I put hot chutney into hot jars with seals that are in water hot enough that I have to fish them out with a pair of sterile tongues.
