    Rainbow Trout Recipes?

    My Bro brings me a couple of freshly caught Trout every month or so and I need some alternative recipes. My current favourite is to stuff them with an Orange and Mushroom mixture and bake them in the oven. But I need to try some other, preferably baked, recipes.

    Got a nice one where you fill the trout with a horseradish and breadcrumb stuffing, bake it in foil with a splash of white wine. Its on the work PC so I can post it on Tuesday when I go back in.

    Sounds good m8, look forward to that. I used to have horseradish in the garden, dont think it's there now. Not seen it fresh in the shops, best buy some sauce.

    You managed to get rid of horseradish in the garden????

    How? Agent Orange or something?

    That stuff's worse than mint, I swear... goes down soooo damn deep too. I had a load, wanted to get rid of it and had to dig down about a foot or so and STILL wasn't near the root tips.... ended up pouring petrol over the root ends and filling in the hole.

    Anyways, the recipe uses sauce out of a jar, so its easy.

    lol, yeah, I had a bonfire over it. Wasn't Intentional but it killed it.

    Used to have a patch of mint at my parent's place when I was growing up. Dog used to pee all over it and it still didn't die. Though thankfully that did stop my mum from using it... Before we got the dog she used to stick a sprig of mint in with boiled veggies and I'm still haunted by the taste of 'spearmint spuds'... Don't get me wrong I like mint sauce but when you boil it in with something it ends up tasting like chewing gum!

    Clingy, here ya go!

    Oven baked Trout with Horseradish stuffing and a Spinach Mash

    Serves 4
    Prep time: 15mins
    Cooking time: 20mins

    Ingredients

    4 whole rainbow trout, trimmed
    100g fresh breadcrumbs
    2 tsp horseradish sauce
    2 tsp tarragon, chopped
    1 lemon
    150 ml White wine
    150 ml Fish stock
    750 gm Sainsbury's Charlotte potatoes, cooked
    350 gm Sainsbury's baby leaf spinach
    150 gm green beans
    1 medium onion, peeled and sliced
    2 cloves garlic, peeled and crushed
    1 bunch chives
    2 tsp sesame oil
    2 tsp sesame seeds

    Method

    Wash the fish thoroughly, removing any slime and blood, then pat dry with kitchen paper.

    Line a deep baking tray with foil, leaving a large flap to one side.

    Lightly grease the foil, then mix the fish stock and wine together and pour a little into the tray.

    Mix the breadcrumbs, horseradish and tarragon together, then stuff the fish with the mix.

    Lay the fish into the tray, sprinkle over the onion, garlic and any tarragon
    stalks, then top up with the wine and stock.

    Fold the flap of foil over and seal tightly.

    Bake in a pre heated oven at 200 C for 15 minutes.

    Meanwhile, blanch the beans in boiling water, drain and then toss with sesame oil and sesame seeds, keep warm.

    Warm a pan over a moderate heat and add the butter.

    Add the potatoes and roughly crush with a fork.

    Add the spinach and cook until the spinach starts to wilt.

    Remove the fish from the oven, drain from the liquid and serve with the spinach mash and beans, sprinkled with chopped chives.

    Cheers bud, this sounds just the ticket. I know fish should only just be cooked, but nearly all my trout recipes severely undercook. Maybe my trout are bigger but I find it needs half an hour.
